This paper describes the basic principles and they key components of the resonator technique for high-resolution ultrasonic measurements in liquids and illustrates its application to the analysis of food colloids. In this technique the ultrasonic parameters of liquids are obtained through the measurements of resonance characteristics of acoustic resonators. Modern advances in electronics and in the construction of ultrasonic resonators combined with the scientific background of interpretation of ultrasonic characteristics obtained in the last decade make high-resolution ultrasonic measurements a powerful tool in different kinds of analysis of food colloids in research and industry.
